Learning On the Journey

Today I spent some time making plans to improve myself time. I learnt that you don’t need to spend a lot of time and energy to change yourself. Don’t expect change to happen overnight. It’s a daily practice. It takes one step after another to run a marathon. Start slowly and then build momentum.

Today, I will find one way to change my life.

One Thing – Budgeting Money

The other day I inspired myself to post a new a sub topic for my blog. It was because I was writing about how you only have to do ONE THING that will better yourself. I thought I would post updates about how I am working on improving myself.

Today’s challenge was budgeting money. I estimated on how I will use my next pay cheque. I am trying to set aside ten percent of my pay into a savings account. I give money to mama that covers rent, then I am putting away more money for my savings since I have decided on going back to school next year.

I also used my day planner to plan other events that will help me organize my life better.

Stillness – Eckhart Tolle

“When you wash your hands, when you make a cup of coffee, when you’re waiting for the elevator – instead of indulging in thinking, these are all opportunities for being there as a still, alert presence.”

This is something I am working on. I enjoy mindful but sometimes it can be difficult but I’m not letting any difficulties stand in the way.

Pumpkin French Toast

I had breakfast with my boyfriend today, it was great as usual. Today we made Pumpkin French Toast.

Ingredients

  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 4 eggs
  • 2 Tbsp packed light-brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 9 slices Texas toast (or other white bread such as Challah or French bread)
  • Butter, for griddle

Directions

  • Preheat an electric griddle to 350 degrees (a non-stick skillet set over medium heat also works fine). In a mixing bowl whisk together milk, pumpkin puree, eggs, brown sugar, vanilla, cinnamon, nutmeg and ginger until well combined. Pour into a shallow dish.
  • Butter griddle and dip bread into egg mixture (allowing a few seconds for it to absorb mixture. I also squeeze gently to soak the mixture to center), then rotate and coat opposite side. Transfer to griddle and cook until golden brown on bottom, then lift, butter griddle once more and flip french toast to opposite side and cook until golden brown. Serve warm with butter and maple syrup.

Him and I used Cinnamon Raisin Bread and since we only used five slices of bread, we decided to just add three eggs instead of four.

We also made Earl Grey Vanilla tea. My boyfriend makes the best tea. We added a little bit of butter to our finished product as well as sugar and cinnamon.

Lending A Helping Hand

I would love to do a quick tidying of my boyfriend’s room, it’s not atrocious but it just needs a little more tender, love and care. He’s been working long days so he doesn’t have a lot of energy to tidy it. I don’t live there so I don’t know where they keep their cleaning supplies.

But I tried my best. I made the bed, put our dishes in the sink and I dusted off his table. Alas I wasn’t certain if the table is water resistant so I didn’t put a lot of water on a Kleenex. Obviously it didn’t thoroughly clean it but the thought was there.

As usual I left him a note on his pillow. I tried some Origami but failed, again, the thought was there.

Today, I will try my best to lend a helping hand. I won’t just lend a hand for someone to return a favour. For that is business. You should lend a hand because it’s in your heart to do so. This person would be grateful for your action, no matter how big or how small your genuine acts are.

Bowties with Creamy Pumpkin and Parmesan

I thought that this dish would have been amazing. It was different.

My boyfriend said it was good.

Whilst I made it my boyfriend’s sister told me that I’ll make a great wife.

The meal consisted of bowtie noodles, butter, sour cream, pumpkin puree and Parmesan cheese.

I would post the recipe later on today.

Lower Expectations

I’m kind of a type of person who has expectations but I’ve been trying to omit this bad habit.

I was watching my show and now I realized that it wasn’t as good as I hoped it would be.

Another way where I noticed that I have high expectations, I had big hopes that a dinner with my boyfriend but it didn’t turn out as great as I hoped.

This had helped me to lower my expectations so I don’t want to end up disappointed.

Socializing

It was fun catching up with my coworkers and a friend who works near me. He dropped in for a visit. It was fun, he tells that he has been reading my blog.

It has been a fun day. We talked a lot about my pumpkin fetish, although one of my co-workers said that I talked about pumpkin too much. Although I would disagree.
