Pasta Shells

Earlier this morning, I made my boyfriend and I lunch before he went to work.

We didn’t have a lot of time so I made us pasta. I add olive oil and salt (I like to pour it in my hand first before I add it to the dish so I don’t add a lot) to the water before it boils. As it’s boiling I added Italian seasoning (oregano leaves, thyme, basil and garlic powder). I waited just another minute or two to add the noodles.

I let the noodles cook for eight minutes. I drained the water from the pot. I served the noodles in a bowl and then I drizzled olive oil and added a bit more of the seasonings as well as Parmesan cheese. It was delicious!!

There was enough for me to have seconds and my boyfriend was able to take the last serving for work. I’m glad it was perfectly distributed!

Family Time

Today I spent time with my dad at his parents’ house. It was a lot of fun. I am so glad that they became great grandparents! My cousin and his wife had a baby – not me, not for another decade!

We enjoyed looking at a photo my aunt shared with my dad.

Today, I will make time to spend with family and my loved ones.

Garlic Parmesan Potato Wedges

Baked Garlic Parmesan Potato Wedges

I made this and I loved it! I didn’t measure the spices and the way I did it was using a clean bag add the potatoes and then adding the oil and spices. Shake the bag so the potatoes are evenly coated.

I offered it to my boyfriend’s brother. He enjoyed it as well. 🙂
