Earlier I was at my boyfriend’s house for Easter and I was in charge of the carrots. My boyfriend peeled and washed them for me. I chopped them using a skill that my grandmother taught me by cutting them on an angle. She told me that is how the natural sugars stay in the carrot, which gives the carrot flavour.
Then afterwards you place water in a pot let it boil and then once it boiled add the carrots. About 12 minutes or so the carrots will become tender. Next you drain the water leaving enough water to cover the bottom of the pot. Set the carrots aside.
Then simmer and add 1/4 cup of margarine and about 2/3 cups of brown sugar. Let the margarine melt and then bring the carrots back in the pot, cover and let the mixture mingle for a few minutes.
Serve hot
