Spaghetti Noodles With Bell Peppers

Earlier for dinner I made spaghetti noodles with bell peppers.

I wasn’t able to write down the recipe because I did by taste.

First you cook the spaghetti with water and a bit of salt. I cooked my noodles longer than I usually would with pasta.

You can use which ever vegetables you wish (peas, carrots, broccoli, mushrooms, bell peppers etc.,). I only had bell peppers on hand since I didn’t plan this in advance. I sliced that up into thin slices. Then I fried them in olive oil.

For the sauce I used hoisin sauce, teriyaki sauce, soy sauce, balsamic vinaigrette and grated ginger as well as garlic. I tasted it as I went and thought of what would make it taste awesome. I peeled the ginger before grating. Use your discretion. Place ingredients in a medium sized bowl and whisk.

Once the noodles are done, drain and then add them to the wok to fry. After five minutes add the sauce and let it dry for another five minutes.

Serve immediately. You may even grate some ginger on top.

My favourite part was eatingt this with my sister.



Doing Me

I have always viewed taking care of yourself as a selfish act but now that I have focused on myself it isn’t a selfish but a selfless state like Eckhart Tolle said inĀ The Power of Now. I am thoroughly enjoying that book. Now I’m not saying you have never have to help out people ever, you still can. I am showing us the difference between letting someone walk over you and helping them out. There is a difference.

I did a lot of things that we were just for me and not for anyone else. I went for a run. I washed the dishes and put them away. I swept my room. These tasks are so simple but they sparked a lot of joy to me. I also ate healthy foods from doing all of that exercises and stretches.

Lesson of the Day

Doing things for yourself isn’t a selfish it is a selfless state. Start small and build your way.

Day 133

Today has been far the most productive I have had in a long time.

I have had a stressful week but I am slowly becoming more positive.

I am eating healthier, I’ve been exercising more and I have been focusing on me more. I feel great!

Positive Changes

Yesterday I had a cup of tea with a friend whom I haven’t seen in a long time. That was an enjoyable time although it got a bit sad about what we were talking about. That sparked us to be positive and think more positively about our situations.

I became inspired to have a positivity wall where I write quotes on a pieces of paper and hang them on the wall. I just started so I’m still in the process of adding on to it.

Spend Time with Family

Yesterday I was fortunate enough to spend time with my dad and his parents. We had a lot of fun.

We watched Ellen and then we socialized over dinner and then we had dessert followed by Wheel of Fortune and Jeopardy.

I solved a lot of the puzzles. I love watching Wheel of Fortune.

Lesson of the Day…

I will take time to spend time with the family.


Two days ago my boyfriend’s mama bought us a sandwich from a local sandwich shop.

It was so good. My toppings were butter, slices of ham, carrots, parsnip and hot peppers. I loved it.
