My boyfriend’s family and I made lasagna. We used ricotta and marble cheese and bell peppers as well as the beef and noodles and sauce. It was very creamy with the ricotta cheese, I haven’t cooked lasagna with that kind of cheese before.

Garlic Chicken Noodle Soup

Since I’ve been sick I have been adding more soups into my day as well as teas.

My boyfriend made it for me. I chopped the garlic and I found the oregano leaves and salt and pepper.

This soup contained noodles, chicken, carrots and onions.

It tasted even better than the day before I had soup because my boyfriend made it for me.


Beef Soup

I had bought my boyfriend noodles in a cup for work but I forgot to bring them with me to his place. I will make a note for myself.

It contains beef, noodles, carrots and corn.

It’s delicious. I can’t wait to have one with my boyfriend. 🙂 ❤

Chicken Noodle Soup

I was at my boyfriend’s and I made us soup. We did the grocery shopping together and then split the total; how cute are we? ❤

Anyway we got back from the grocery store and we started chopping up everything – the carrots, celery, potatoes, onions and the chicken.

Mind you we did a lot of things backwards since this is new to us.

We chop up all of our vegetables first. Then we sliced the chicken but whilst we were slicing the chicken we should have been cooking the vegetables – note to self.

We ended up cooking the chicken at the same time as the vegetables and noodles. Which isn’t something I shouldn’t have done.

We let the chicken cook with Olive Oil and then in another frying pan we added butter then waited for it to melt so we can add the potatoes, celery, carrots. I waited awhile to add the onions.

In a medium pot boil water and then add noodles and cook following cooking directions. When cooked, strain the noodles.

In a large pot we poured chicken broth and vegetable broth. We waited for that to boil and then we added everything to this pot and let it simmer.

Fortunately his mama, older brother and younger sister and her boyfriend were home and they got to have soup with us. We got a lot of reviews! Everyone loved it. 🙂 ❤

Don’t Allow Disappointment to Get the Best of You

Earlier I was at my boyfriend’s house and we were making our chicken noodle soup I let the noodles simmer too long in the pot with the water. I haven’t made soup before so I wasn’t able to time everything perfectly.

I feared that if I drained the water from the pot then the noodles would dry out. I asked my boyfriend to drain the noodles and he thought that it would have been soggy. I also burned the bottom of two of the frying pans.

I wasn’t in a happy mood as I would like to have been.

But the end result was amazing!!

Today I will not allow disappointments to bring me down instead I will see them as a set back and a way for me to improve. Thus there is no need to fret and get upset over it.

Chicken Stir Fry With Yellow Curry

Whenever I don’t know what to eat, I always end up making a chicken stir fry. For those who do not, that is my absolute favourite meal!

I didn’t add as many vegetables as I usually do but I added three bell peppers (orange, yellow and red) with garlic. I bought and cooked my chicken. After the chicken was cooked I added the yellow curry sauce and let that simmered for a bit. Then I served it rice.

But before I had my stir fry I tried this Thai soup which had noodles. It was good but it was extremely salty.

Noodles with Veggies

I was at my boyfriend’s house and his ma made us dinner. She made us noodles with bell peppers. It had a nice spicy taste but it wasn’t overly spicy so that’s good. We had a refreshing glass of lemon water. One of my favourite drinks. I felt special that she made us dinner. 🙂

*Note* My boyfriend and I are at an age where it is appropriate for us to still be living with our parents. 🙂

Thai Peanut Chicken

This is one of my favourite foods! But today I was unproductive so I tried one that was pre-cooked and ate that for dinner before I went to work.

It had noodles, carrots, bell peppers, snow peas, chicken and peanut sauce.

It was fairly delicious although I wished I had time to make it myself. Maybe I’ll budget my time better tomorrow…
